I love fresh foods, but one of the challenges to buying fresh foods is that the food goes bad over time. Project Drawdown, a non-profit organization, suggests that if global food waste is reduced by 50% by 2050, the amount of carbon dioxide that would not be emitted is the “equivalent to taking 2,570 coal-fired power plants offline”.
I've slowly been learning how to rescue fruits and vegetables so that we don't have to throw food away. For instance, I put fruit that is starting to get old into bags in the freezer. We make smoothies with those. They are delicious! Here's a website with a recipe section to avoid the food ending up in the garbage. What are you doing to avoid food waste?
